We are raising our first group of lambs in 2022! We are trialing three breeds to see which we like best: Katahdins, Texels and Kathadin x Dorpers. The finished weights will vary a bit but we will be selling lamb by the retail cut (loin chop, rib chop, shank, and sausage only) and lamb shares (whole only, however, despite the term "share").
Retail cuts are available starting early August!
Lamb Share Pricing:
$10.00/lb HW + processing + tax (EX: 47lb x $10.00 = $470.00 + $120 (processing) + $14.75 (tax)
What Do I Get?
Here is a breakdown of a whole lamb with a live weight of 132 pounds with a hanging weight of 57 pounds. This example is for a larger lamb. The Katahdins will hang a little less than this, closer to the 50-pound mark.
*HW-“Hanging Weight” is the term used to describe the weight of a carcass minus the head, hide and entrails. At this point the usable cuts of meat are still intact. Whole and halves are sold to you based on hanging weight.
We are processing lambs every few weeks between September and November and are processing these lambs at Rettland Farm in Gettysburg, PA. It's a USDA processor that makes excellent lamb sausage!
We are only raising 30 lambs this year so don't hesitate to get your reservations in.
